Holiday Gift Guide

In years past I would have had my Christmas list made and checked twice. Well, not this year. I've felt behind from the very beginning of the season. I like to take my time and pick out the perfect gifts for my loved ones, something that will bring them great joy. I'm [finally] half way done with my shopping and below I've listed a round up of some of my favorite finds this year. It's been a 'Prime Find' Christmas in our house-- two day shipping, who can't get down with two day shipping! Am I right moms? 





1.| Puffin in Bloom Collection - Ava is very much into reading right now. She loves books. When I found this collection of classic books I knew that I had to grab a set for her-- not only are they beautiful but the stories are ones I hope she grows to love. The collection includes Little Women, Annie of Green Gables, Little Princess and Heidi. 

2.| Fujifilm Instax Mini 9 Instant Camera - Another find for Ava, who's six this year and becoming so much fun to shop for, like this Mini Instax camera. I remember when the Polaroid I Zone instant camera came out -- I got one for my birthday and put that thing to good use. I still have a couple of those instant pictures in my hope chest. I know like she'll have a blast with this. 

3.| KidKraft Farm to Table Play Kitchen Set - I mean, the name alone! A Farm to Table kitchen set, with butcher block counters and a farmhouse sink much like my own. It was a no brainier-- Naomi is getting this but I'm sure they will all put in hours of use. I'm not looking forward to putting the thing  together (hello wine) but I can't wait to see them play with it. 

4.| Cozy Minimalist Home: More Style, Less Stuff - This is a great gift for someone who loves a good coffee table book. One that is pretty annnd practical. I gobbled one of these up for myself and I don't regret it. In the season of life that I'm in this book is a must.

I mean, yes, a bit of a splurge but if you know someone who is constantly heating and reheating their mug (I'm looking at your moms...) then this is a gift for that person!

Crafting Your Own Fall Capsule: 10 x 10 Challenge

10 items, 10 outfits, 10 days. 
Can you do it?

This summer I made the decision to attempt a capsule wardrobe. After years and years of having an overflowing closet but still feeling frustrated when it came time to select an outfit-- I said enough was enough. I tried out Project 333 created by Courtney Carver. In that challenge, you reduce your wardrobe to a total of 33 items that you love. You challenge yourself to only wear those items for 3 months. The goal is to simplify, appreciate what you already have and wear only what you enjoy. I enjoyed that challenge so much. Now, each time I crack open the door to my closet I no longer feel discouraged with the impression I have nothing to wear. 

So, when I came across others talking about the 10 x 10 challenge I needed to find out more. The 10 x 10 challenge created by Lee Vosburgh from Style Bee. The challenge involves picking 10 items and styling them in 10 outfits over 10 days. The first step involves selecting 10 core items from your closet, including shoes. Accessories are not included. Well, in just under thirty minutes I was able to come up with my 10 items. Thanks in part to my already slimmed down wardrobe.  


My 10 x 10 includes:
- one pair black high waist jeans 
-one pair dark wash ripped knee jeans
- one sweater
-one layering cardigan
-one short sleeved tee
- three long sleeved shirts
- one dress
-ankle boots

I did not include my diaper bag or my jacket in this round of the challenge. 


Style Bee's Basic Formula goes as follows: 


2 Pairs of Shoes (1 heel + 1 flat)

4 Tops (Consider pieces that layer well like a fitted long-sleeve, a button-down and a cardigan)

Sweet Potato Cottage Pie | Recipe

Guys! There's true fall weather happening here today in Central Pennsylvania. We wore jackets out to the bus stop and I drank my coffee with the kitchen door open and cleaned the downstairs windows while enjoying the crisp breeze. Now it's time to meal plan and when I think of dinner time during the fall season the first words that come to mind are warm and comfort. There's nothing like a big cast iron pot of chili simmering on the stove waiting to be poured over a homemade batch of mashed potatoes, or a sizzling pot roast on a Sunday afternoon, or a bubbling dish of cottage pie/shepherds pie. Cottage pie has become one of our families favorites. Growing up we always called it Shepherds Pie but I've since come to learn that it's only Shepherds Pie if you make it with lamb-- if you use beef then it's technically Cottage Pie.

My standard recipe is pretty common and includes warm layers of ground beef, country vegetables and home-style mashed potatoes all topped with sharp white cheddar. But, this fall I wanted to try something new and festive to incorporate seasonal flavors. So after a bit of research and a few adjustments I gave the Cottage Pie a try topped with savory mashed sweet potatoes and switched up the filling components. I added some thyme, rosemary, nutmeg and garlic for flavor.




Sweet Potato Cottage Pie

for the filling:
1 lb of lean ground beef
16 oz bag of mixed vegetables
1 large onion, chopped
2 cloves of garlic, crushed
3 cups of beef or vegetable stock
2-3 tablespoons of tomato paste
A splash of balsamic vinegar
A splash of Worcestershire sauce
Thyme
Rosemary
Salt and black pepper
Spray oil

for the mash:
1 lb sweet potatoes, peeled and cut into chucks
1 tablespoon butter (or olive oil if your non dairy)
1/8 teaspoon nutmeg
1 teaspoon garlic powder
1 teaspoon salt
2 tablespoons milk (more if needed)

directions:
-Spray a large frying pan over a medium high heat with spray oil, add the onion and garlic to the pan and cook until softened.
-Add in the ground beef and a couple dashes of thyme and rosemary, cook until browned- breaking up any big lumps with the back of a wooden spoon.
-Add the veggies and cook until thawed.
-Add the stock, tomato paste, splash of Worcestershire sauce and balsamic vinegar and bring to a boil.
-Reduce heat and allow to simmer for approx 20 minutes until sauce thickens.
-Set aside and allow to cool completely
-Boil the potatoes in salted water for 15 minutes or until tender.
-Drain well and add the butter, nutmeg, garlic powder, salt and milk.
-With a hand blender or stand mixer blend until they reach a creamy consistency.

assembly:
-Preheat oven to 350 degrees F.
-Spray and fill a 13 in x 9 in casserole dish with the filling and spread the mash on top.
-Bake for 40 minutes until the topping is beginning to brown.
[bonus: top with shredded cheddar cheese to create a crispy crust and extra layer of texture.]

extra tips:
You can do a half white potato/half sweet potato combination to cut the sweetness or half sweet potato/half butternut squash combination. You can also omit the nutmeg in the mash if you don't care for it.

From the Vault | Fall Diffuser Blends & Iced Coffee

When I wrote this post last year the change in weather was just starting and had me excited for the fall season, much like now-- although I can do without the recent 80 degree days. I mean, it's October and I just sent my girls off to school in late summer type attire. I know I'm in the minority when I say that I've been enjoying the rainy and gray mornings. These are typically the types of days that I enjoy spending in cozy socks with a steamy mug of tea or coffee. The fall decor is officially out, and it's simple this year-- our year has been has one of new change so I'm just taking it all slow and getting adjusted to our new surroundings. That being said-- as far as clothing goes I'm definitely counting down the days until scarves, ankle booties and flannel shirts are acceptable daily attire.



As for drinks of the season I'm still not a PSL fan. I love pumpkin, but real pumpkin and only in specific ways. I've been waiting two years to see if Starbucks will bring back my favorite seasonal drink, the Spiced Sweet Cream Cold Brew-- not to be confused with the Vanilla Sweet Cream Cold Brew. They haven't yet so I'm still making mine at home. I make my cold brew in my french press and let it steep overnight. And then I add the cream and syrup recipe to my liking.

Spiced Sweet Cream Cold Brew [or Hot] Coffee
directions:
Combine 1/4 cup maple syrup, 1 cinnamon stick, 3 whole cloves, and 1/4 cup water in a small pot. Bring to a simmer, then remove from heat and let steep at least 30 minutes or up to overnight. Strain into a clean container. Meanwhile, make the vanilla sweet cream by stirring 1/4 cup cream, 1/2 tsp. sugar, and 1/4 tsp. vanilla extract in a small bowl to combine. Keep components in the fridge. When you are ready to make your coffee just mix 12 ounces of cold brew or hot coffee with 2–4 Tbsp. vanilla sweet cream and 1–2 tsp. maple-spiced simple syrup, adjust the amounts depending on how sweet you like it.


And - while I still do like to burn the occasional candle for ambiance, I also really love diffusing my oils during the fall months because there are so many great 'fall' related scents that also have immune boosting effects. During this season that is always a extra added bonus (with all of the back to school cooties that make their way home)!

So if you pop by our house on an October morning you will probably catch me with my Spiced Cold Brew in hand and the Warm Cinnamon Buns blend in the diffuser, only one has calories included.

Love. Often a choice, rather than a feeling.

Love and marriage- some days it can be more of a choice rather than a feeling.
I think that's the point.

What if we wake up every day and simply choose to love the person next to us? Or, in my case the person who's already been out in the fields or at the barn for two hours by the time my feet finally hit the floor. What if we put the feelings and needs of our spouse at the top of our already incredibly long and almost impossible to-do list? We already do this with our children [assuming that you started your own small tribe of dictators] but do we do that with our spouses, daily? OK-- eye rolling at the computer screen, right? This chick, she's thirty, been married less than a decade so what does she know? Valid. I'll give you that, I mean- what do I know? What do any of us actually know for sure? But, stay with me here-- I truly believe that loving our spouses is a daily choice. Choosing to love them even when the shiny parts start to fade, when the butterflies flutter a bit slower, when the excitement of the unknown becomes known, and when the real-life rhythm starts to take a steady pace. I've only been married going on eight years now so I don't have decades of experience under my high waist jeans- but even in our less than a decade relationship we've dealt with our fair share of growing pains and still do, every day. The two of us are continually adjusting our exceptions of each other. Our spouses and our partners, we're not always going to like them but we can surely always love them. So, what if, every single day we woke up and simply made the choice to love the person next to us?

Take our story for example.
In the beginning, our relationship went from zero to one hundred and sixty in 80 days flat. Yes, you read that correctly. I'm talking about from the time of our first date to the night of our engagement it was a relationship that consisted of a grand total of 80 days. Did we really truly know each other at this point? No, probably not. Did we truly believe that we found the person we were supposed to love and share our lives with for the rest of time? Yes. Well, after that whirlwind ride, we had this crazy idea that we would bring three humans into the world in just under 5 years time. So, believe me when I tell you that I will never claim to have all the answers and I am no expert. I'm probably just plain crazy. 

I remember after having each one of our children I would always think to myself-- how on earth can this man still love me after witnessing all of that, I mean...like, all of that. Thankfully he chose to love me through it, the highs and the lows, even when I wasn't the easiest and my emotions and hormones controlled my every action. Life happens, and then kids happen and we tend to subconsciously stop choosing to put our partner at the top of our priority list. [And, now is probably the part where you probably want me to say that kids should always come first above our spouses but I really don't think they should {gasp} right?]. I've read a few books and a handful of articles stating that the best thing for our children is to see us taking the time to place our significant others ahead of them and other priorities. When we do that they get to see how marriage works first hand and have a front row seat to experience love in the most secure way. I know, this idea usually isn't an easy sell  and it was hard for me to wrap my head around at first but showing them a strong marriage and a strong parental team is just way too important. Also- I don’t want to wake up in twenty years, with fully raised children who are leaving home and realize that I don’t know the person next to me anymore. I don't want to come to find out that I don't know their passions or their desires in life because I was too busy pushing them to the bottom of my list. 

But, with that all being said- we are your average married couple. We argue, we push buttons, we trigger each other but we do know how to love fiercely. Everyone has shortcomings and annoying habits that come to light when you live close proximity to another human being, sun up to sun down, 365 days a year. These people of ours are bound to get on our nerves and creep under our skin. I grew up as an only child, a fact that I can't change about myself. While my parents did a remarkable job of keeping me socially integrated with peers and fairly grounded from a life in the clouds; I still have a few only child attributes that makes it hard (at times) for my husband to understand my thought process and reasoning. Full disclosure, I do truly love being an only child. I can count on one hand the times I thought I should have had a sibling. But, my husband--he grew up in a home of multiple children where space and belongings had to shared and daily compromises were made so, by definition, we grew up in completely different worlds. Neither one better or worse than the other, just different. So, when it comes to us co-existing as people, spouses, and parents it can; at times, cause a wrinkle. I can usually recognize some of my 'only child' behaviors and adjust accordingly, he still chooses to love me despite it. So, if he loves me in spite of my flaws why shouldn't I wake up every day and choose to love him completely-- in spite of his flaws. For example laundry is my kryptonite. Hands down. I hate it. And this simple truth annoys my husband from here to a high, high hill somewhere. I know this and I try to do better. That's it, that's all that we can do friends. And you know what, he's annoyed with me but he still chooses to love me. I also have some poor time management skills and he is overly [annoyingly] punctual. He throws his wet towels on the bed, dear Jesus, that ones goes through meeeeee-- have you ever tried to crawl into a bed after a damp towel sat there for hours? Eek. Also, I don't vacuum and clean out the goldfish and crumbs from the car weekly, that gets under his skin. I will also run my SUV with the gas light on for a good 20 miles before filling up, this comes in second to annoying him back up to that high hill somewhere. He doesn't understand why I write on a computer to connect with people and I don't get why he enjoys chatting on the phone for long periods of time. We all have our things. 

The people we fall/fell in love with will not always be the exact people that they once were, over time we all grow, evolve, and change. Which, I don't think is a bad thing- it's human nature. These people that we are committed to sharing our lives with will change, sometimes in little ways and at times in bigger ways. So, what other choice do we have than to keep connecting and finding common ground. I believe, in my only 30 year developed brain, that every day, you show up and you choose them, you choose to love that person. You put in the time and the effort-- you 'do the work' no matter how hard it may seem to be at the time. So we can lean on them, share our struggles, tear down the walls to let them in and be vulnerable. Marriage isn't easy but it can be so rewarding. 

So, what if you wake up every day and mindfully choose to love the person next to you and put them first. Above everything. As for me, I do choose to love him every day but I do need to work on continuing to keep him at the top of my priority list. The little tribe that we created has made this task a 'teeny' bit (our middle daughters new favorite word) difficult but I feel it's far too valuable to forget. Let's faithfully and habitually choose our spouses' first. We can't put marriage on autopilot and think that we will always feel the way we do today, we have to choose to feel that way and continue making that choice. It will be perfectly imperfect and worth the sacrifice.

Let's Bring Back the Village

There are days I wish I could be a parent and a mother from a different generation. I recently watched a video clip online (only slightly exaggerated and very true) depicting mothers today and how interactions can go in a social setting-- usually, I watch these, chuckle to myself and go about my day but this particular time it struck a chord with me and stayed with me all day. After watching this and thinking back on various situations that I've found myself in over the past 6.5 years of being a mother I can honestly say that there are days that I wish I could have been a parent at a time when ‘it takes a village’ was actually a thing - not just a saying. It’s not that I don’t recognize how much we’ve accomplished so much in the past few decades and grown leaps and bounds. It’s also not because I don’t enjoy technology and social media (I mean, I AM a blogger!). It’s just that – it feels like a generation ago would have been a simpler time to be a mother, and a simpler time to raise a child. A generation ago would have been a time when children didn’t have a social calendar that rivals a celebrity; a time when mothers weren’t publicly shamed for their parenting choices; and a time when a simple search for parenting information would return a flood of conflicting “expertise,” causing us to lose sleep worrying that we are getting it all wrong. Before a world of helicopter parents and lawnmower parents. Before we were a society that described parenting in terms like “attached parenting” and “detached parenting.” The days before we had to go Facebook to catch up with and check in on with family only to scroll through our feed and have anxiety attacks after reading three different articles telling you that you’ve been doing thirty things wrong this entire time, and by your calculations led you to realize your children are royally doomed for the rest of their lives.


We live in a time of the great debates— and I’m not talking presidential debates. I’m talking about society's great debates about parenthood: vax vs. anti-vax, breast vs. bottle, public school vs. homeschool, formula, cry it out vs. co-sleep, front-facing or rear-facing, organic or non-organic, college-level preschool or play-based learning, screen time or no screen time. And the list goes on, and on, and on... It’s endless and it is simply taxing on the already very weary soul of a parent.

Now, we feel this urge to shame, condemn and criticize other mothers. But it hurts so much when it happens to us. We share because we want to feel that sense of community, but then we constantly feel led to defend the things we do and the choices we make. Rest assured, I will not throw stones at glass houses because I have the ability to see my own flaws, and I’ve ridden the guilty bus a time or two. But flaws, flaws are something that every single living, breathing, walking, talking human, parent, mother, and father have, they've always been there woven into our personal DNA. But today – in this generation – it feels like each and every one of these flaws is magnified in a way they have never been before. Furthermore, our shortcomings and personal choices are also picked apart and set center stage for mass criticism. Even more painfully, these choices can be silently mocked or judged with disapproving eyes.


I wish for the times of a ‘village’ in support of the greater good which is- surviving while our children are thriving. For once, can’t we go back to a time when surviving meant serving up a pitcher of red kool-aid on a warm day just to see some happy stained smiles, letting your child play with and drink from the garden hose without worrying about lead exposure, letting your kids paint each other from head-to-toe because it keeps them happy, packing simple lunches in a brown paper bag without any fancy faces, serving up fruit snacks without have to apologize or explain, using timeouts and accountability consequences, allowing your child to watch two movies in one day because you need a mental health break,  having a hidden pack of strawberry mentos in your bag for emergencies, and serving Fruit Loops for dinner when dad is working late. Can’t we go back to a time when thriving simply meant just being a remarkably average parent, instead of an exhausted superhero with a worn out cape?

We all crave community, acceptance, and understanding with a side serving of grace. Let your children be children a little while longer – and be proud of that. We are all just trying to survive. So, gift others around you with empathy. Be understanding of differences. Be a friend to someone who needs a friend. Be kind to your fellow mothers and fathers. Be humble, please. Be compassionate and caring. Let's be a village in support of all of the other villagers.

Friday Top Five | The Lunchbox Edit

We have found ourselves at the end of our first three weeks of school, three weeks for us because Charlotte started all-day preschool a week before Ava started first grade. It's been an adjustment for us with our daily schedule, I haven't quite hit my stride yet and still feel a bit discombobulated at times  but the girls are loving school and seem to but be having great experiences so far-- which makes it all worth it. 

I started them out with items that I thought would work for their lunch boxes but quickly realized that a few of our things weren't doing the job. Our ice packs were too large and didn't fit nicely in the boxes. Our water bottles kept leaking and and so did our compartment inserts. So, after doing a more in-depth search online [amazon, I mean what can't you find and prime these days...] I found a few products that I really like and have been working nicely for us.




1.| Bentgo Box  - The lid fits nice and tight! So, Charlotte's favorite ranch dip doesn't get mixed up with any other foods.    
 2.| Reusable Water Bottle Set with Fridge Tray Organizer - These are wonderful, they come in a set of five with a fridge organizing tray. They are affordable so I won' t be crying if they leave them behind. They're not 'all day' insulated but I just toss in a few ice cubes. 
3.| Thin Ice Packs - These are nice and thin and fit between the bentgo box on both side while still being able to zipper the lunch box.    
4.| kids RXbar - Ok, so this in't an accessory BUT they are the kids new favorite protein bar. I love the adult RXbars but I could totally eat the PB&J kids one and have no complains. 
5.| Insulated Thermos - Ava wants to start taking tomato soup and mac and cheese so I picked up this small thermos for her to be able to do just that. I pour hot water and let it sit for about 10 minutes before I fill it with the hot food that she wants.

Busy Back to School Nights | Pressure Cooker Recipes

If you live in the same area as we do then your children are all starting to go back to school, either this week or next week. With two of our girls in school programs now our days are starting to get busier—plus, for us, harvest time is right around the corner.
 
I’ve been playing around with recipes in my instant pot all summer and by far my favorite thing to make in it is yogurt but I also really enjoy how easy and QUICK it is to make a simple and delicious meal for my family in under 30 mins using just one cooking appliance.
I’m going to share two family friendly recipes with you today, Chicken Alfredo & Spaghetti. Basic right? Yes, but so good and too easy—especially if you’re in a post-school, pre-evening event dinner rush.

 


 

Classic Spaghetti
1 lb ground beef [pre-cooked or browned on the instant pot sauté function]
1 clove of garlic, minced
¼ cup of onion, diced
1 jar of pasta sauce [we love the classico brand]
2 cups of water
8 oz dry spaghetti noodles, broken in half
Extra toppings: grated parmesan cheese & fresh parsley
Directions:
Put Instant Pot on sauté.
Add olive oil, onions, and garlic and cook until onions are softened a bit.
Add ground beef and cook until pink is gone. Drain grease or leave in, your choice.
Break noodles in half, lay them crisscross so that they don’t cook together and it will be easier to stir at the end.
Add jar of spaghetti sauce, water, push noodles into liquid until they are covered. (do not stir)
Turn IP or pressure cooker to manual, high pressure.
Secure lid, close steam valve and set to 10-12 minutes (if you want more al dente set for a bit less time).
Quick release when it beeps (be careful of how you open the vent), stir, top with cheese and parsley and serve.
[Do not recommend doubling this recipe as it will not turn out properly. Make two batches separately if you want more.]

Chicken Alfredo
2 cans of white chunk chicken or meat from ½ rotisserie chicken
1 clove of garlic, minced
1 jar of Alfredo sauce [we love the classico brand]
1 1/2 cup of water
8 oz dry spaghetti noodles, broken in half
Extra toppings: grated parmesan cheese & parsley to garnish
Directions:
Place chicken (of your choice) and minced garlic on the bottom of greased cooker insert.
Break noodles in half, lay them crisscross so that they don’t cook together and it will be easier to stir at the end.
Add jar of Alfredo sauce and the water, push noodles into liquid until they are covered. (do not stir)
Turn IP or pressure cooker to manual, high pressure.
Secure lid, close steam valve and set to 10-12 minutes (if you want more al dente set for a bit less time).
Quick release when it beeps (be careful of how you open the vent), stir, top with cheese and parsley and serve.

Cheesy Sweet Corn & Zucchini Pie | Recipe

It has come to my attention that my favorite zucchini corn pie recipe is hard to locate on the blog. Well-- friends, this recipe is too good to not have it's own post dedicated to it! With a few more weeks left of summer, it is a must try. Our family loves it, even the kiddos!! I usually serve it with homemade meadow tea & watermelon. It's the perfect dinner for a sticky hot and humid day. 




Cheesy Sweet Corn & Zucchini Pie

Ingredients:
- frozen or fresh pie crust
- 4 TBSP butter
- half of a yellow onion diced
-1 cup of sweet corn
- 2 medium zucchini, very thinly sliced
- 8 oz shredded mozzarella cheese
- 3 eggs, beaten

Directions:
-Prepare crust according to directions
-preheat oven to 375 degrees
-heat butter in a large skillet and sauté onions, zucchini, and corn over medium-high heat (5-8 mins)
-remove from heat and cool for a few mins
-add 6 oz of shredded mozzarella to bottom of the pie crust
- top cheese with veggie mixture, arranging zucchini to lay as flat as possible
-slowly pour egg mixture over and let soak in
- top with remaining cheese
-bake for 20-30 mins until middle is set
-let stand for 10 mins before cutting

[It may bubble up while it bakes so I usually place pie on a baking sheet in oven]

Summer Garden Goulash | Recipe

The garden has been giving me some really great vegetables this summer. My zucchini plants just got started and I'm always looking for a fun and simple dinner where I can incorporate them (we do love zoodles but like to mix it up sometimes). The other night I just couldn't think of anything to make so I started combining a bunch of different recipes and items from the fridge, pantry, and the garden and we ended up with this really tasty goulash. You can use store-bought sauce and get the same effect but this time I used the homemade tomato sauce from the freezer that I had made the previous week.


Summer Garden Goulash

1 lb ground beef
1/2 onion, diced
1 tsp minced garlic
14 oz vegetable broth
14 oz homemade or jar tomato sauce 
1 medium zucchini, chopped in cubes
2 cups farfalle or tube pasta 
1/2 tsp Italian seasoning (if needed)
fresh parsley

Brown meat with garlic and onion in large skillet; drain. Return to skillet. 

Add tomato sauce and broth; mix well. Bring to boil. Add pasta and zucchini; mix well. 

Cover; simmer on medium-low heat 15 min. or until pasta is tender. 

Stir in Italian seasoning (if using) until blended; top with cheese and parsley.

Enjoy!

Whitening Sensitive Teeth at Home

I’ve never been one for taking the time to whiten my teeth. Not that I had anything against it, who doesn’t love white teeth? But, I’ve never made it a priority or something high on my to-do list. But after years of being a coffee drinker, a wine drinker, a tea drinker and just an overall human being, my pearly whites [read: not so white] could use some love.


When I heard about Smile Brilliant I was very intrigued and after doing a bit of research I liked the results I saw that people were achieving. I was a tiny bit apprehensive at first, but after reading up on the process—I thought to myself, ‘What do I have to lose? Besides coffee stained teeth, that is..’ So, I decided to give it a whirl.



My box arrived quickly and packaged neatly. The instructions were very well written and the picture cards helped greatly. The first step I had to take was the create my molds. I was nervous at first to mix the molding clay together but if you pay close attention to the instructions, it should all go effortlessly. After my impressions were made I dropped them in the mail and waited for my customized trays to return.


When they arrived I was shocked at how perfect the mold had worked because they fit like a glove, even the imperfect teeth. Next up, it was time to start whitening. It took me a couple tries to find the perfect time, for me, to whiten. Once you place the small ribbon of whitening gel in the tray (don’t use too much- learned that the hard way) then you place them on your teeth for 45 minutes to 3 hours. After the first few minutes, you don’t realize they are there because they fit so well. After whitening, you move on to the desensitizing gel— that last step takes about 20 minutes and you can’t eat or drink afterward for a certain amount of time.




That being said, night time I always found was the easiest for me— I wanted to get it accomplished during nap time but since that’s usually my lunchtime it just didn’t work the times I tried. All and all, I have to say that I’m so very pleased with the company and the process. While there are several steps, it’s not difficult to get started. It just requires taking the time to let the process work. There is enough gel for several whitening procedures and you can tell some immediate results. From the Vault | No-Bake Strawberry Icebox Cake

It's been a while since I posted this recipe--three years to be exact. It's been so hot and humid outside which has me craving bright and light recipes and this one is just too good not to share again. Also, Aaron is not a dessert fan but this is one of his favorites (second next to banana creme pie). If you have somewhere to go this is a great dessert to take, it's easy, looks impressive and taste amazing! The best part, you ask? --You don't have to heat up your kitchen to make it!




No-Bake Strawberry Icebox Cake

Ingredients:
2 pounds fresh strawberries, washed
3 1/2 cups whipping cream, divided
1/3 cup confectioners sugar
1 teaspoon vanilla extract
4 sleeves graham crackers (I sometimes end up using less after I break a bunch)
4 ounces semi sweet baking chocolate, chopped

Directions:
Strawberry Icebox Cake-
-Hull the strawberries and slice into thin slices.
-In a mixer, whip 3 cups of cream (medium high speed) until it just holds stiff peaks.
-Add the confectioners sugar and vanilla extract. Whip to combine.
-Spread a small spoonful of the whipped mixture on the bottom of a 9×13 inch baking pan, or platter.
-Lay down six graham crackers. Lightly cover the top of the graham crackers with a thin layer of whipped mixture, and then a single layer of strawberries. (Repeat three more times, until you have four layers of graham crackers.)
-Spread the last of the whipped cream over the top and swirl it lightly with a spoon. (I use my favorite icing tool)
-Then add a few more strawberries to the top.

Chocolate Ganache topping-
-Heat the remaining cream on the stove until bubbles form around the edges, then pour over the chopped chocolate. Let it stand for a few minutes, then whisk until the mixture is thick and glossy.
Drizzle over cake and then refrigerate at least 4 hours before enjoying!


Summer Reading List | Books

Reading used to be one of my favorite past times and these days it feels like more of a novelty to crack open a book and put a chunk of time into reading. After a long day, I usually choose a show to binge on tv for an hour or two because it allows me to mindlessly not think for a few minutes-- but, this summer I'm trying to be more dedicated to reading in the evenings. This is a list of books I've put together, most have been hanging out in my 'books' list on Amazon for a while now but I've been slowly ordering one here and there and I'm working my way through them. So far I've finished 3 of the 10 that I choose. There are a few of them that are getting optioned for movies so I definitely want to read them before they come out on the screen. The ones with (**) are the ones I've already read!

Berry Citrus Jam | Recipe

I grew up on strawberry freezer jam, my mom would go pick up local berries, bring them home and make batches of freezer jam for us to enjoy over the winter months. If you've ever had homemade strawberry jam then you understand what a treat that it is-- it tastes like summer. It wasn't until I had my own kitchen that I started making it myself and experimenting with different flavor combinations. I tried out two new ones this season so far, my little taste testers have given their sticky thumbs up to both and I'm excited to share one of them with you! 

Its called 'Berry Citrus Jam' and it's a flavor combination of blueberries, raspberries, and orange citrus. Once our strawberry jam was complete and in the freezer I wanted to try something new-- I had a beautiful bowl of blueberries in the fridge but I'm not a fan of pure blueberry jam so I browsed the web for compatible flavor combinations I could used to spice things up and decided on a blueberry-orange combo-- and then I wanted to create another layer of flavor I thought I would cut back on some of the blueberry and add raspberries. Also -- it's worth noting that I don't deseed my jam, first of all, I like the rustic look and I just don't have time for all of the extra steps. Below is a photo of the finshed product as well as the recipe I used, it's totally customizeable so have fun!
